Until the 1970s, the only commercially grown lettuce in Australia was the iceberg. Three decades on, head to the supermarket and there's a whole range of lettuces you can use in your salad: mesclun, raddicchio, witlof, mignonette...the list goes on.

One of Australia's finest chefs, Damien Pignolet, has just put together some of his favourite salad recipes in a new book, Salades.
