The two most effective things when roasting chicken are dry brining and controlling time and temperature. Here I use mustard instead of salt to brine.
Air drying the chicken in the fridge draws moisture from the skin and deepens the flavour of the meat. A slow roast at a low heat gives you tender meat and bones that pull away clean. After that it’s just fat, salt, and aromatics.
