Pro Tip: We highly recommend using a scale; take the amount of coffee you're using, and double its weight in water. For example: 30 grams of coffee warrants 60 grams of water.
In case you don't want to watch the video a million times, here's the process by the numbers:
1. Grind your coffee to a medium-coarse grind.
2. Place your Chemex on the scale and insert the filter.
3. Wet the filter using hot water to remove all the paper notes in the filter. This will also allow the hot water to heat up the belly of the Chemex.
4. Remove the hot water from the Chemex.
5. Place your grounds in the filter.
6. Pour some of the hot water on the grounds in an even, circular motion, then pause for a minute, allowing the coffee to bloom. Blooming allows the CO2 gases to escape.
7. Keep slowly pouring water on the grounds until you’ve added the full requisite amount.
8. Once the the coffee has brewed, you can remove the filter. You don’t want to squeeze the filter to release any excess liquid; just pull out the filter and discard it.
9. Pick up the Chemex by the wooden collar, so you don’t burn your hand, give the coffee a good swirl, and it’s ready to serve.
