East Idaho Eats: Brio Bowls by Keiko brings healthy, delicious smoothie bowls topped with fruit

IDAHO FALLS — A local business is bringing healthy and delicious food all packed into a beautifully colored smoothie bowl.
Brio Bowls by Keiko in Idaho Falls are made with thick fruit smoothies and are topped with fresh fruit and superfoods.
The owners, Keiko Dye and her husband Robb Dye, started out as a food trailer in 2020 and have expanded to locations in Pocatello and Idaho Falls.
Keiko told EastIdahoNews.com that one of the bowls that are a top seller is called the PB&C which stands for peanut butter and chocolate. The smoothie base has acai, blueberries, strawberries, banana, chocolate, almond milk, and natural peanut butter. It’s then topped with granola, banana, strawberries, cacao nibs, and wildflower honey.
“What makes this magic is it’s got crushed cacao pieces on top which is a cocoa bean. It’s unsweetened rich dark chocolate and you just get a pop of chocolate in the middle of all the creamy, yummy crunch. So the bowls are beautiful but they really are a party,” she said.
Dye explained there are vegan options. Anyone can add to the bowls and make it their own.
Another popular bowl is called Flower Power and it has a vibrant blue base to it.
The smoothie base is made with blue Spirulina, pineapple, banana, and almond milk. It’s topped with granola, kiwi, blueberries, strawberries, bee pollen, and wildflower honey.
“These are my own recipes and blends,” Dye explained. “We have seasonal bowls (too). So for Halloween, we have one. For Thanksgiving, we have a pumpkin pie bowl that’s amazing. Christmas, we have a cran raspberry that has pomegranates and crushed pistachios. It’s beautiful and delicious. Every month and every season, we roll out something new.”
If you are unsure about any of these bowls, Dye says a good starter is The Brio Bowl. The smoothie base has acai, blueberries, strawberries, bananas, and almond milk.
“It comes with banana and coconut. We love to do the coconut chips. They are big and chunky pieces. They are unsweetened,” she said.
Brio Bowls in Idaho Falls is located at 2087 East 17th Street. They are open Monday through Saturday from 9 a.m. to 7 p.m. The Pocatello location is at 1219 Yellowstone Avenue at the same hours.
“We are inside The Cookie Place. We are two separate businesses that share space, which is amazing. We have really enjoyed that partnership,” Dye said.
