as posted by the channelIDAHO FALLS — Rose Marie’s Gluten Free – a local, specialty food truck – has been cooking up gourmet hamburgers, chicken strips, chicken parmesan sandwiches, mozzarella sticks, onion rings, funnel cakes and more for two and a half years in Idaho Falls.
The food truck’s owner and founder, Rose Marie Longacre, said she and her daughter have been gluten-free for more than a decade, but the area offered limited options for people with gluten- or dairy-free dietary restrictions.
“We love fried food, and you cannot get that when you’re gluten-free,” she said.
When she first opened in July 2022, Longacre said one customer literally started dancing for joy.
“When I opened, she’s dancing in the parking lot because she hadn’t had onion rings in 40 years,” Longacre said.
Her motto – emblazoned in yellow outside of the food truck – proudly proclaims, “You won’t believe it’s gluten-free.”
