Whole Wheat Vanilla Scones

Tortilla Recipe:

-2 cups whole wheat flour (mill 1.5 cups hard white / red wheat berries)

-1.5 teaspoons salt

-1/2 teaspoon sugar

-1.5 teaspoons baking powder

-1/4 cup lard (or oil)

-3/4 cup hot water

Combine ingredients in a medium sized bowl or stand mixer. Mix for roughly 3-5 minutes until dough is smooth. If too sticky, add in 1 tbsp flour until consistency is tacky, but doesn't come off onto your fingers. Roll out little balls until they are your desired tortilla size. NOTE: The sticker the dough, the easier it will be to keep them rolled out, a dry dough will want to contract back, making them hard to flatten. It is easier to have sticky dough that you flour while rolling. Make sure you flour work surface and top of dough while you are rolling.
