In winter time, the water inside evergreen trees should turn to ice, but it doesn't. Why?

Basically, evergreen trees make their own antifreeze through a special combination of natural sugars and antifreeze proteins, which bind to ice crystals inside the plant cells and prevent them from growing bigger. This effectively lowers the freezing point, the way anti-freeze works in your car engine. Except this is all natural.
