PASTA E CECI INGREDIENTS
8 ounces small pasta - such as ditalini, elbows, small shells...
3 ounces tomato paste
1 small celery rib - about a 1/2 cup diced
1 small carrot - about a 1/2 cup diced
1 small onion - about a 1/2 cup diced
2 cloves garlic - minced
1/4 cup olive oil
2 (20) ounce cans of chickpeas
1 cup Parmigiano Reggiano - or use the rinds if you have them
6 cups water - can also use low sodium chicken stock
1 sprig of rosemary
1/4 tsp crushed red pepper
NOTE:
-Serve with crusty bread, a drizzle of extra virgin olive oil, more grated cheese, and crushed red pepper.
