Frisky’s Café opened last week and is already gaining fans through its gourmet salads and Acai bowls.
“We’ve got a bunch of different salads,” owner Chandler Smith said.
The unique name for the restaurant is one if its crowning features. Smith said the restaurant’s name was something that was tossed around during its brainstorming phase. A family member came up with it and it stuck.
“We just wanted something fresh and a little unique to Rexburg. We really liked the name and maybe it has a little bit of edge to it,” Smith said.
Frisky’s offers seven specialty salads with titles like the Asian Persuasion and the Spicy Latina.
“The Spicy Latina is a pork salad. It’s not like any of the other pork salads in town. It really has a kick with the jalapeño ranch,” Smith said.
