IDAHO FALLS -- If you’re looking for a meal where you can mix and match just about everything, Mahana Fresh has plenty of options. From teriyaki chicken and roasted sweet potatoes to buffalo cauliflower, birria beef and even Dole Whip, there is something for everyone's taste.
Owner Heather Bradshaw opened the restaurant six years ago at 429 South Utah Avenue in Idaho Falls. She wanted to bring something different to the area and everything is cut, peeled, seasoned and cooked fresh in-house.
Customers build their own bowls by choosing a base, vegetables, protein, toppings and one of Mahana Fresh’s scratch-made sauces. There’s also mac and cheese, baked potatoes, avocado smash, tomato cucumber salad and several cheeses.
One customer favorite starts with basmati rice and is topped with grilled teriyaki chicken, roasted sweet potatoes and broccoli tossed in sesame ginger sauce. Bradshaw recommends finishing it with Mahana Fresh’s creamy wasabi sauce.
“People are usually afraid that it’s going to be spicy,” Bradshaw says. “It just really has like a magical little hue of wasabi in there.”
And despite the name, it isn’t overly hot.
One of my favorite items on the menu is the buffalo cauliflower. Customers can also choose from garlic cilantro green beans, roasted mushrooms, honey sriracha Brussels sprouts and several other vegetables.
The protein selection is just as extensive. Mahana Fresh offers spicy ahi tuna, grilled steak, roasted tofu and several types of chicken, including barbecue, spicy jerk, huli huli, teriyaki and Key West, which features a sweet honey-lime marinade.
Mahana Fresh offers catering and Bradshaw confirms there are plans for expansion.
“There will be,” Bradshaw says. “We’re not quite ready to make that big announcement. We do have a big announcement coming up in a few months.”
