Sourdough Dairy Free Coffee Cake
1 cup active sourdough starter (or discard for more tang)
½ cup coconut oil
¾ cup brown sugar
2 eggs
½ cup dairy free milk (I used oat milk)
1 tsp vanilla extract
1 ½ cups flour
Option 1: unbleached all-purpose
Option 2: freshly milled soft white wheat (let batter rest 10–15 min to hydrate)
1 tsp baking powder
½ tsp baking soda
½ tsp salt
Cinnamon Streusel (No Butter)
½ cup flour
⅓ cup brown sugar
1 tsp cinnamon
Pinch salt
3–4 Tbsp coconut oil (just enough to form crumbs)
Instructions
1) Preheat oven to 350°F. Grease an 7x11 pan or line with parchment. 2) Mix wet ingredients. 3) Stir starter, oil, sugar, eggs, milk, and vanilla until smooth. 4) Add dry ingredients
Make streusel
1) Combine dry streusel ingredients, then drizzle in melted coconut oil and mix with fork or fingers until crumbly. 2) Spread half the batter in the pan. Sprinkle half the streusel. Add remaining batter. Top with remaining streusel. 3) Bake 35–40 minutes, until center is set and toothpick comes out clean. Let cool 15–20 minutes before slicing.
