We love our basic dough recipe,! It's so easy and versatile, and it's the dough that we use for a lot of the recipes that we make. This recipe is also easy to double, triple; even quadruple, depending on your kneading options and personal needs. You may use this dough for any combination of yeast bread variations, including our absolutely AMAZING Ooey Gooey J-Braid and another favorite - CINNAMON ROLLS!
Basic Dough Recipe: (This recipe makes 2 - one pound loaves.)
1 1/2 cups warm water
2 tsp. salt
2 Tbs. Lecithin (optional)
1/3 cup oil
1/3 cup honey
4 1/2 cups freshly milled flour
1 egg (optional)
1 Tbs. Yeast
In a bread maker - load all ingredients from top to bottom and allow the bread machine to mix, knead, and complete one rise. Then follow the video directions for rolling the dough.
In a mixer - Mix all liquids together. Add the egg, then salt and lecithin. Continue to mix while adding half of the flour. Add the yeast and then the rest of the flour. Knead for about 5-6 minutes. Let rise until double. Then follow the video directions for rolling the dough.
OOEY GOOEY FILLING:
Combine 1 1/2 cups Sucanat (evaporated cane sugar), 1 Tbs. cinnamon, dash of nutmeg (optional). Add 6 Tbs. melted butter. Stir with whisk. (This is enough filling for 1 recipe of Basic Dough.)
Follow directions in the video for tying into the J-Braid. Bake at 350 for 25-30 minutes.
CINNAMON ROLLS VARIATION:
Prepare 1 recipe of Basic Dough as directed above. Follow video instructions but instead of forming into a J-Braid, cut into 1 inch in slices. Place cut side up in a 9×13 inch greased pan with sides touching. Let rise until double. Bake at 350° for 25-30 minutes. Makes about 12 large cinnamon rolls.
May also cut slices 3/4 inch thick and place in 2 greased round 9 inch cake pans. This will make 14 cinnamon rolls. Ice with Cream Cheese Icing.
CREAM CHEESE ICING!
8 oz. cream cheese (softened)
1-2 Tbs. honey
1 tsp. vanilla
Whip cream cheese adding honey (about 1-2 Tbs.) and vanilla to taste. Whip until smooth.
Spread Cream Cheese Icing abundantly over the Cinnamon Rolls and devour!
