East Idaho Eats: Diablas Kitchen offers 'clean comfort food'

IDAHO FALLS -- VO: Diabla’s Kitchen in Idaho Falls has found a way to combine tasty and healthy all into one unbeatable dish.

SOT: “It’s always healthy good ingredients that’s why we come here mostly because you can see what you’re eating,” Kris Taylor says.

VO: Deana Brower, owner and chef at Diabla's Kitchen says she does everything she can to keep all of her ingredients organic, fresh, and bought locally.

SOT: “We call our food clean comfort food, so everything is fresh and homemade, and it’s the things that you really want as a comfort but it’s made in a more healthy way," customer Kris Taylor says.

VO: The kitchen at Diabla's is open concept. Customers can see all of the ingredients Brower uses as she prepares their dish. She also makes sure nothing is fried.

SOT: “I have a little flat electric griddle, and an oven. I make rice in the oven, I’ve pretty much figured out how to do everything in an oven,” Brower says.

VO: Brower is constantly changing her menu. It changes week to week with the exception of a quiche and maybe a customer favorite. One recipe that’s been on the menu for a bit is the brunch nachos. It’s fresh baked tortilla chips smothered in apricot habanero sauce, cheese, spinach, and other fresh ingredients.

VO: Brower is very conscious of what customers can or can't eat, and is willing to cook around food allergies or intolerances. She's committed to making everyone's eating out experience enjoyable.

SOT: “I Just want to bring some food awareness just in the sense that there’s a lot out there to explore an try especially when it comes to flavor profiles,” Brower said.

STAND UP: Diablas Kitchen specializes in brunch and is open from 10 a.m. 3 p.m. Tuesday through Sunday. Friday nights Diablas hosts themed dinners with a beer or wine pairing at 6:30 p.m. that are reservation only. It is located at 368 A St, Idaho Falls.
