The Quebec maple syrup producers, a leading trade group, announced that it is releasing nearly half of its strategic maple syrup reserves, which is roughly 50 million pounds.
Quebec produced 73 percent of all maple syrup in the world by 2020, and the United States is by far its largest consumer, accounting for 60 percent of Canada's export volume. They're facing their first shortage since before the pandemic, as they struggle to meet these high requests.
Spokesperson Helene Normandin says, “the pandemic has helped in our case because we are seeing people cook more at home and use more local products.”
