Looking for a simple and delicious Asian-inspired entree? Look no further! This dish might look impressive, but it's very easy to prepare. In this episode of Transform Your Kitchen, Dr. Josh Axe shows you how to make Cashew Chicken Lettuce Wraps.
Ingredients:
2 in. piece of fresh ginger root, peeled and grated
2 cloves garlic, minced
2 green onions, chopped
1 can water chestnuts
2 tbsp. raw honey
2 tbsp. tamari or Bragg’s liquid aminos
1 c. cashews
1-2 tbsp. grapeseed oil or coconut oil
1 ½ lbs. organic, free range chicken breasts, cut into ¾ in. pieces
1-2 tsp. sea salt
1 tsp. black pepper
Directions:
Prepare and chop ginger, garlic, scallions, and water chestnuts.
Prepare Asian sauce by stirring together raw honey and tamari or liquid aminos.
Toast cashews in oven at 300 degrees for 3-5 minutes.
Cook chicken in grapeseed oil in large skillet over medium/high heat. Season chicken with sea salt and pepper and cook, stirring occasionally, until chicken begins to brown, about 3 min.
Lower heat to medium and stir in garlic and ginger. Add scallions and cook for 1 min. Stir in water chestnuts and soy sauce mixture. Continue to cook until chicken is cooked through, about 4 min. Remove from heat.
Divide lettuce leaves among individual plates, spoon chicken mixture over the top, and sprinkle with cashews.
