This tangy bean salad is a great side dish with unique flavors. It's also packed with nutrients. Prepare it the night before to save even more time!
Ingredients:
Dressing:
1 tbsp. Bragg’s liquid aminos
3 tbsp. apple cider vinegar
1 tbsp. tahini
1 tsp. stone ground mustard
Salad:
1 can cannellini or garbanzo beans
½ bunch parsley, chopped
½ c. carrots, grated
½ c. green onions, chopped
Directions:
1. In a medium bowl, whisk together vinegar, Bragg’s, mustard, tahini and water.
2. Add beans, green onions, carrots, and parsley and toss to combine.
3. Let marinate for 15 minutes before serving.
